From 400 Conejos: According to the ancient Mesoamericans, the number 400 was synonymous with innumerable. Don Tacho and his son, Joel Santiago, created and named this mezcal after the belief that the spirits of 400 rabbits take over one's body and behavior when it is ingested. 400 Conejos Joven Espadin is produced traditionally using mesquite and encino oak as the heat source to cook the espadín agaves for the underground conical oven. Clear color. Meaty, minerally, nutty, herbal, green aromas and flavors of pepper, salt, cured pork belly, composting grass, petrol, burnt rubber, new leather, and kambucha with a round, lively, dryish medium body and a warming, intricate, medium-long finish that exhibits overtones of hard italian cheese, cured meats, chorizo, salsa verde, bleu cheese, and caramelized apple.

This Espadin has hints of wild rose, pear and oak.

Mezcal Verás Reposado is made with agave Espadin. The agave used in this mezcal is traditionally roasted using a stone horno (oven), that is constructed of river rocks. The agave is cooked with pine wood for 3-5 days. After roasting, the cooked agave are milled using a horse drawn tahona and fermented for 15-20 days in open-air pine fermentation tanks. No additional yeast is added, allowing for natural yeasts in the air to ferment the cooked agave. Once fermented, the agave is double-distilled in a small copper still. After distillation, this mezcal is aged for three months in American Oak barrels.

The pisco is crystal clear and a 50/50 blend of two muscat grape varieties, the Rosé and the Alexandria. It’s aged for a year in stainless steel vats. The result on the nose is a light and grassy scent, reminiscent of a country meadow on a sunny day, with touches of freshly-cut grass and the scent of flowers, like roses. On the palate it’s a little rougher, and thinner than some piscos, but still enjoyable with lime and other citrus coming through, alongside those floral flavours, and a creamy vanilla sweetness. At a lower price point than most, this would be a good one for anyone curious to try pisco for the first time.

El Pintor Blanco is a truly work of art. The amount of cooked agave notes is just a one of a kind. The process starts by selecting only ripe blue agaves from a single state in the low lands, near the tequila volcano. The cooking process is done in a traditional brick oven. Afterwards the agave grinds in two parts: 1 part goes to our traditional Tahona and the 2nd part goes to a mechanical mill. Afterwards the cooked juice is fermented with fibers. To finish there is double distillation in stainless steel pots with cooper coil. It's finished at 84 proof, just ideal for cocktail making and agave aficionados.
